    Instructions

      Heat 1 tablespoon olive oil in a large skillet or pot over medium heat.

      Add 1 large finely chopped onion and sauté for 5 minutes until softened.

      Stir in 2 minced cloves garlic, 1 teaspoon ground cumin, 1/2 teaspoon ground turmeric, and 1/4 teaspoon cayenne pepper, cooking for 1 minute until fragrant.

      Add 1 can of drained and rinsed chickpeas, 4 cups roughly chopped fresh spinach, and 1/2 cup vegetable broth to the skillet, then simmer for 5-7 minutes until the spinach has wilted.

      In a small bowl, whisk together 1/4 cup finely diced dried apricots, 2 tablespoons fresh lemon juice, and 1 tablespoon honey to create the glaze.
