Spiced Chickpea and Spinach Salad with Tamarind Dressing

In a large bowl, combine 5 ounces of roughly chopped fresh spinach, 1 cup of halved cherry tomatoes, 1/2 medium diced cucumber, and 1/2 small thinly sliced red onion.

Drain and rinse 1 can (15 ounces) of chickpeas, then add them to the bowl with the vegetables.

In a small bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of tamarind paste, 2 tablespoons of fresh lime juice, 1 teaspoon of cumin powder, 1/2 teaspoon of coriander powder, 1/2 teaspoon of chaat masala, and 1/4 teaspoon of black salt.

Stir in 1 small finely chopped green chili and 1/4 cup of chopped fresh cilantro into the dressing mixture.

Pour the prepared tamarind dressing over the chickpea and vegetable mixture in the large bowl.
