Spiced Chickpea and Sweet Potato Tagine

In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat.

Add 1 medium chopped yellow onion and sauté until softened, about 5-7 minutes.

Stir in 3 minced garlic cloves and 1 inch of grated fresh ginger, cooking for 1 minute until fragrant.

Add 1 tablespoon of ground cumin, 1 tablespoon of ground coriander, 1 teaspoon of ground turmeric, 1/2 teaspoon of ground cinnamon, and 1 teaspoon of smoked paprika, stirring for 30 seconds until aromatic.

Incorporate 2 large diced sweet potatoes, 1 (15-ounce) can of drained and rinsed chickpeas, 1 (14.5-ounce) can of undrained diced tomatoes, and 2 cups of vegetable broth, bringing the mixture to a simmer.

Reduce heat to low, cover, and cook for 20-25 minutes, or until the sweet potatoes are tender.

Stir in 1/2 cup of fresh chopped cilantro and the juice of 1 lemon just before serving.
