      Press 14 ounces of extra-firm tofu for 30 minutes to remove excess water, then cut it into 1-inch cubes and set aside.

      Whisk together 0.25 cup soy sauce, 2 tablespoons rice vinegar, 1 tablespoon sesame oil, 1 tablespoon grated fresh ginger, and 2 minced garlic cloves in a large bowl to create the marinade.

      Add the 1-inch cubed tofu, 2 large bell peppers cut into 1-inch pieces, and 1 medium red onion cut into wedges to the marinade, tossing gently to coat all ingredients evenly.

      Thread the marinated tofu and vegetables alternately onto 8 pre-soaked wooden skewers, ensuring an even distribution of ingredients.
