    Instructions

      In a small bowl, whisk together 2 tablespoons of tamarind paste, 1 tablespoon of white miso paste, 1 tablespoon of soy sauce, 1 tablespoon of mirin, and 1 teaspoon of grated fresh ginger until thoroughly combined.

      Place 2 cod fillets, each weighing 150 grams, into a shallow dish and evenly brush half of the prepared tamarind miso glaze over both sides of the fish.

      Allow the cod fillets to marinate for 15 minutes at room temperature while preparing your steaming setup.

      Bring 2 cups of water to a boil in a steamer pot, then carefully place the marinated cod fillets on a heatproof plate inside the steamer basket.

      Steam the cod for 8-10 minutes, or until the fish is opaque and flakes easily with a fork.

      While the fish is steaming, thinly slice 2 scallions and julienne 100 grams of daikon radish for garnish.

      Gently transfer the steamed cod fillets to serving plates, drizzle with the remaining tamarind miso glaze, and sprinkle with the sliced scallions and julienned daikon radish.

      Serve immediately with a tiny dash of 1 teaspoon sesame oil and a side of steamed rice if desired.
