In a separate large pot or deep steamer base, combine 400 milliliters full-fat coconut milk, 1 large thinly sliced red onion, 2 slit green chilies, 2 tablespoons finely grated fresh ginger, 3 minced garlic cloves, 10 fresh curry leaves, and 1 small knotted pandan leaf.

Add the marinated octopus directly into the pot with the coconut milk mixture, ensuring the octopus is submerged as much as possible, and stir gently to combine everything.
