- 1
Heat 1.5 tablespoons of olive oil in a large wok or a wide, heavy-bottomed pan over high heat until shimmering.
- 2
Add 600 grams of cubed chicken breast to the hot wok and sear for 5-7 minutes, tossing occasionally, until golden brown and cooked through; remove the chicken from the wok and set aside.

Add the remaining 1.5 tablespoons of olive oil to the wok, then add 1 large thinly sliced yellow onion and sauté for 3 minutes until softened.
- 4
Stir in 3 minced garlic cloves, 1 large thinly sliced red bell pepper, and 1 medium zucchini cut into half-moon slices, and continue to wok-toss for 4-5 minutes until vegetables begin to soften.
- 5
Add 2 medium diced ripe tomatoes, 1 tablespoon of red pepper paste, 2 teaspoons of ground sumac, 1 teaspoon of ground cumin, 1 teaspoon of sweet paprika, 1 teaspoon of salt, and 0.5 teaspoon of black pepper to the wok and cook for another 3 minutes, stirring well to combine all ingredients.
- 6
Return the seared chicken to the wok with the vegetables, toss everything together thoroughly for 2 minutes to ensure the chicken is coated and heated through.
- 7
Serve the Sumaklı Sebzeli Tavuk Kavurma immediately, garnished with 0.25 cup of chopped fresh parsley.
