    Instructions

    1. 1

Thinly slice 200 grams of seitan into desired pieces and combine them in a bowl with 2 tablespoons of fish sauce, 1 tablespoon of soy sauce, 1 minced lemongrass stalk, 2 minced garlic cloves, 1 tablespoon of brown sugar, and 1 tablespoon of lime juice.

    2. 2

Allow the seitan to marinate at room temperature for at least 20 minutes to absorb the flavors.

    3. 3

In a small bowl, whisk together the sauce ingredients: 1 tablespoon of fish sauce, 1 tablespoon of rice vinegar, 1 tablespoon of brown sugar, and 2 tablespoons of water.

    4. 4

Heat 1 tablespoon of vegetable oil in a non-stick pan over medium-high heat, then add 2 thinly sliced shallots and 1 thinly sliced red chili, cooking for 2 minutes until fragrant.

    5. 5

Add the marinated seitan to the pan and pan-sear for 3-4 minutes per side until beautifully browned and slightly crispy.

    6. 6

Pour the prepared sauce over the seitan in the pan, bringing it to a simmer and cooking for 2 minutes until the sauce slightly thickens and coats the seitan.

    7. 7

Serve the pan-seared seitan immediately, garnished with 1/4 cup of fresh chopped cilantro and 1/4 cup of fresh mint leaves.
