In a small bowl, whisk together 1/4 cup of tahini, 1/4 cup of fresh lemon juice, 1/4 cup of water, and a pinch of salt until the sauce is smooth and creamy.

Heat 1 tablespoon of olive oil in a large wok or high-sided skillet over high heat until shimmering, then add the marinated seitan and stir-fry for 5-7 minutes until it is lightly browned and slightly crispy.
