    Instructions

      Rinse 2 cups of red lentils thoroughly under cold water until the water runs clear, then set aside.

      Heat 3 tablespoons of olive oil in a large pot or Dutch oven over medium heat, then add 2 large finely chopped red onions and sauté for 8-10 minutes until softened and translucent.

      Stir in 6 cloves of minced garlic and 2 inches of grated fresh ginger into the softened onions and cook for an additional 2 minutes until fragrant.

      Add 4 tablespoons of Berbere spice blend and 2 tablespoons of tomato paste to the pot, cooking for 3-4 minutes while stirring constantly to toast the spices.

      Incorporate the rinsed 2 cups of red lentils and 4 cups of vegetable broth into the pot, bringing the mixture to a boil.

      Reduce the heat to low, cover the pot, and simmer the stew for 25-30 minutes, or until the lentils are tender and the stew has thickened, stirring occasionally to prevent sticking.

      Season the Misir Wot with 1 teaspoon of salt, or to taste, and stir well before serving.
