Zolotoi Rybka Fritters with Preserved Lemon & Dill

Dice 500 grams of cod fillets into small 1 cm pieces.

In a large bowl, whisk together 150 grams of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.

In a separate bowl, combine 120 ml of milk and 1 large egg yolk.

Gradually add the wet ingredients to the dry ingredients, mixing until a smooth batter forms.

Gently fold in the diced 500 grams of cod, 2 tablespoons of chopped fresh dill, 1 whole finely minced preserved lemon, and 1 minced garlic clove into the batter.

Heat 750 ml of vegetable oil in a deep pot or fryer to 175°C (350°F).

Drop the batter by tablespoons into the hot oil and deep-fry for 3-4 minutes until golden brown and cooked through, turning as needed.

Remove the fritters with a slotted spoon and drain them on paper towels before serving.
